Ingredients

1 serving

Main ingredients

  • 125 g Cherry tomatoes
  • 100 g Cream cheese
  • 25 g Spinach
  • 100 g Penne pasta
  • 5 g Parmesan cheese

Seasonings and other

  • ½ small Yellow onion
  • 1 tbsp Olive Oil
  • 1 clove Garlic
  • 1 tsp Italian seasoning
  • a pinch Salt
  • ¼ tsp Black pepper

Instructions

  1. Prepare the Baking Dish

Preheat the oven to 180°C (350°F). In a large baking dish, add the cherry tomatoes, finely chopped onion, minced garlic, olive oil, Italian seasoning, salt, and black pepper. Stir everything to combine, then place the cream cheese block in the center of the dish.

  2. Bake Until Golden

Slide the baking dish into the oven and bake for about 35 minutes, or until the cream cheese turns golden and the tomatoes begin to blister.

  3. Cook the Pasta

Meanwhile, bring a pot of salted water to a boil and add the penne. Cook according to the package instructions until al dente, then drain and set aside.

  4. Mash and Wilt

Remove the baking dish from the oven and use a spoon or fork to mash the roasted tomatoes into the softened cream cheese, forming a rich sauce. Add the spinach and stir until it wilts in the residual heat.

  5. Combine and Serve

Mix in the drained pasta, ensuring it’s well coated with the sauce. Transfer to plates and sprinkle with grated Parmesan cheese. Enjoy while it’s hot.
