Tips for the best 3 ingredient chocolate mousse
- Use silken tofu, not firm tofu: it's what makes the mousse smooth.
- Drain off any water from the pack before blending.
- Use a good dark chocolate (70% or so): it's most of the flavour.
- Blend for a full minute and scrape down the sides until completely smooth.
Variations
- Vegan: use a dairy-free dark chocolate.
- Sweeter: add 1–2 tsp maple syrup if your chocolate is very dark.
- Flavours: add orange zest, a pinch of chilli, espresso powder or a drop of peppermint.
- Toppings: berries, toasted nuts, cocoa nibs or flaky salt.
Storing
Keeps 3–4 days covered in the fridge.
Frequently asked questions
Can you taste the tofu in chocolate mousse?
No. Silken tofu is very mild, and once blended with chocolate it just tastes rich and creamy.
Is this chocolate mousse vegan?
It is if you use dark chocolate without milk. Check the label.
How long does chocolate mousse need to set?
At least 2–3 hours in the fridge, or overnight for the firmest texture.
Is chocolate mousse with tofu healthy?
It's lighter than a classic mousse with cream and eggs, and the tofu adds some plant protein. It's still a dessert.
