Ingredients
Main ingredients
- 1 small Banana
- 50 g Oats
- 10 g Dark chocolate chips
- 150 g Greek yogurt
- 80 g Raspberries, frozen
- 1 tbsp Almond butter
Seasonings and other
- ½ tsp Cinnamon
- a pinch Salt
Instructions
- Mash and Mix
Mash the banana with a fork, then add the oats, cinnamon, and salt. Stir everything together until well combined.
- Fry and Break Up
Warm a pan over medium heat and lightly grease it if needed. Add the oat mixture and flatten it down with the back of a spatula. Let it cook for about a minute, or until the bottom starts to set, then break it into smaller pieces as it continues to fry.
- Serve and Enjoy
Spoon a layer of yogurt onto a serving plate, top it with the scrambled oats, then add the defrosted raspberries, almond butter, and dark chocolate chips. Enjoy while it’s warm.
Tips for the best scrambled oats
- Use a very ripe banana: it binds the oats and caramelises in the pan.
- Don't stir straight away. Let the mixture set for a minute before breaking it up, so you get crispy pieces rather than mush.
- A non-stick pan and a little oil or butter make the crispiest clusters.
- Thaw the raspberries while you cook so they're soft and juicy by the time you serve.
Variations
- Vegan: use soy or coconut yogurt and dairy-free chocolate chips.
- Add a spoon of protein powder or ground flaxseed to the banana and oat mixture.
- Swap the almond butter for peanut butter, and the raspberries for blueberries or sliced strawberries.
- Make it nut-free with sunflower seed butter.
Storing
Best eaten warm and fresh. Leftover scrambled oats keep 2 days in the fridge; crisp them up again in a hot pan.
Frequently asked questions
What are scrambled oats?
Oats mixed with mashed banana, then fried in a pan and broken into pieces like scrambled eggs, so they turn golden and slightly crispy.
Are scrambled oats vegan?
This version uses Greek yogurt. Swap it for soy or coconut yogurt, and use dairy-free chocolate chips, for a vegan version.
Can I make scrambled oats without banana?
The banana holds the oats together. Without it, use apple sauce or a beaten egg, though the texture and taste will change.
Can I use quick oats?
Yes. Quick oats cook a little faster and make smaller, softer clusters.
