Ingredients

1 serving

Main ingredients

  • 30 g Oats
  • 10 g Pea protein isolate
  • 2 tbsp Greek yogurt
  • 80 ml Oat milk
  • 100 g Raspberries, frozen
  • 30 g White chocolate

Seasonings and other

  • ½ tsp Cinnamon

Instructions

  1. Prepare the Base

Combine the oats, pea protein isolate, oat milk, Greek yogurt, and cinnamon. Stir thoroughly until everything is well mixed.

  2. Warm the Raspberries Until Jammy

Place the frozen raspberries in a heatproof bowl set over a pot of simmering water. Ensure the water does not touch the bowl. Stir occasionally until the raspberries soften and become slightly jammy.

  3. Melt the Chocolate

Chop the white chocolate into small, even pieces, then place it in another heatproof bowl over a pot of simmering water. Stir frequently until the chocolate is fully melted and smooth.

  4. Assemble and Chill

Spoon the oat mixture into a jar or sealable container, then place the softened raspberries on top. Drizzle the melted chocolate over the raspberries, seal or cover the jar or container, and refrigerate overnight so the oats can absorb the liquid and thicken. Enjoy cold the following day.

Tips for the best white chocolate overnight oats

  • Stir the pea protein into the milk first, then add the oats, so it doesn't form lumps.
  • Soak for at least 4 hours, or overnight. The oats need time to soften and thicken.
  • Melt white chocolate gently over barely simmering water. It burns more easily than dark chocolate.
  • Too thick in the morning? Stir in a splash of oat milk before adding the toppings.

Variations

  • Vegan: use soy yogurt and a dairy-free white chocolate.
  • Swap the pea protein for a vanilla plant protein powder, or leave it out and add an extra spoon of yogurt.
  • Use blueberries or cherries instead of raspberries.
  • Lighter: skip the melted chocolate and grate a little over the top instead.

Storing

Keeps 3 days in a closed jar in the fridge. Add the raspberries and chocolate on the day you eat it for the best texture.
