Ingredients

1 serving

Main ingredients

  • 30 g Oats
  • 60 g Banana
  • 20 g Walnuts
  • 250 ml Oat milk

Seasonings and other

  • a pinch Salt
  • 1 tsp Brown sugar
  • ½ tsp Cinnamon
  • ½ tsp Cocoa powder

Instructions

  1. Cook the Oats

In a small saucepan, bring oat milk to a simmer. Reduce the heat to low and add the oats along with the brown sugar and salt. Cook gently, stirring occasionally, until the oats become soft and absorb most of the liquid, about 5 minutes. Remove from heat, cover, and let rest for 2–3 minutes.

  2. Assemble and Serve

Transfer oatmeal to a serving bowl. Top with cocoa powder, cinnamon, sliced banana, and chopped walnuts. Let it cool slightly before enjoying.

Tips for the best banana & nut oatmeal

  • Use rolled oats for a creamy texture in 5 minutes. Steel-cut oats need 20–30 minutes and more liquid.
  • Add a pinch of salt: it doesn't make the oatmeal salty, it makes it taste less flat.
  • The riper the banana, the sweeter the bowl. With a very ripe banana you can skip the sugar.
  • Toast the walnuts in a dry pan for 2–3 minutes for a deeper, nuttier flavour.
  • Let the oats rest, covered, for 2–3 minutes before serving. They thicken and turn creamier.

Variations

  • Mash half the banana into the oats while they cook for a naturally sweet, banana-bread flavour.
  • Swap the walnuts for pecans, almonds or a spoon of peanut butter.
  • Use soy milk instead of oat milk for a creamier bowl with more protein.
  • Overnight: stir the oats, milk and cinnamon together in a jar, chill overnight and add the toppings in the morning.

Storing

Best eaten fresh. Cooked oatmeal keeps 3–4 days in a closed container in the fridge; reheat with a splash of oat milk and add the banana and nuts just before eating.
