  • ¼ tsp Basil, dried

Cut the croissant in half lengthwise. Spread a generous layer of pesto sauce evenly over the bottom half.

  2. Assemble the Layers

Place fresh spinach leaves on top of the pesto. Add slices of mozzarella cheese, followed by thinly sliced fresh tomatoes and sun-dried tomatoes.

Tips for the best caprese croissant sandwich

  • Warm the croissant in the oven for 3–4 minutes before filling it. It turns flaky again.
  • Pat the tomato slices dry with a paper towel so the croissant doesn't go soggy.
  • Spread the pesto right to the edges: it flavours every bite and keeps the bread from soaking up tomato juice.
  • Use a balsamic glaze instead of vinegar if you'd like it sweeter and less runny.

Variations

  • Melted: put the filled croissant in the oven for 5 minutes until the mozzarella softens.
  • More protein: add sliced hard-boiled egg or a few chickpeas smashed with lemon.
  • Swap the mozzarella for burrata, or for a vegan mozzarella-style cheese.
  • Use ciabatta or focaccia instead of a croissant.

Storing

Best eaten fresh. To pack it for lunch, keep the tomatoes separate and add them just before eating.

Frequently asked questions

Is a caprese sandwich vegetarian?

Yes. Check the pesto and cheese labels: traditional pesto contains Parmesan, which is often made with animal rennet. Look for vegetarian versions.

What's in a caprese sandwich?

Mozzarella, tomato and basil, the three ingredients of an Italian caprese salad, usually with olive oil or pesto and balsamic.

Can I make it ahead?

Assemble it close to eating. If you need to prep, keep the tomatoes and pesto separate so the croissant stays crisp.

Can I make it vegan?

Yes: use a vegan croissant, a vegan pesto and a plant-based mozzarella-style cheese.
