Ingredients

1 serving

Main ingredients

  • 20 g Chia seeds
  • 50 g Raspberries
  • 50 ml Oat milk
  • 5 g Pea protein isolate
  • 100 g Soy yogurt

Instructions

  1. Blend the Base

In a blender, combine soy yogurt, oat milk, pea protein isolate, and half of the raspberries. Blend until smooth and creamy.

  2. Mix with Chia Seeds

Pour the blended mixture into a small glass or jar and stir in the chia seeds. Let the mixture sit for a few minutes, then stir again to prevent clumping.

  3. Refrigerate and Serve

Cover and refrigerate for at least 30 minutes until the pudding thickens. Top with the remaining raspberries before serving. Enjoy chilled.

Tips for the best chia pudding with raspberries

  • Stir again after 5–10 minutes. Chia clumps at the start, and a second stir gives you an even pudding.
  • Give it at least 2 hours in the fridge, or overnight, so the seeds soften fully.
  • Too thick? Stir in a splash of oat milk. Too runny? Add a teaspoon more chia and wait 15 minutes.
  • Make 3–4 jars at once for the week: it's one of the easiest breakfasts to meal prep.

Variations

  • Without protein powder: leave it out and use a little more soy yogurt.
  • Other fruit: use strawberries, blueberries, mango or frozen mixed berries.
  • Chocolate: add 1 tbsp cocoa powder and a little maple syrup.
  • Smooth: blend everything, including the chia seeds, for a mousse-like texture.

Storing

Keeps 4–5 days in closed jars in the fridge. Add crunchy toppings, such as nuts or granola, just before eating.

Frequently asked questions

How long does chia pudding take to set?

About 2 hours in the fridge, or overnight. Stir it once after 5–10 minutes so it doesn't clump.

What is the ratio for chia pudding?

Roughly 1 part chia seeds to 6–8 parts liquid by weight, or 3 tablespoons of chia per cup (240 ml) of milk or yogurt mixture. Adjust for a thicker or looser pudding.

Is chia pudding good for you?

Chia seeds are rich in fibre and contain ALA, the plant form of omega-3. With soy yogurt and pea protein, this version is also a good source of protein.

Do you need to soak chia seeds?

For chia pudding, yes: soaking makes them soft and gel-like. Drink plenty of water if you eat dry chia seeds, because they swell.
