Ingredients
Main ingredients
- 1 medium Banana
- 30 g White all-purpose flour
- 50 ml Oat milk
Seasonings and other
- ¼ tsp Baking powder
- ¼ tsp Cinnamon
- a pinch Salt
- ¼ Lemon
- 1 tbsp Coconut oil
Instructions
- Prepare the Batter
In a bowl, whisk together the flour, oat milk, baking powder, cinnamon, salt, and a squeeze of lemon juice until smooth. Add the banana slices and gently mix to coat them evenly in the batter.
- Cook the Banana Slices
Heat a frying pan over medium heat and grease it well with coconut oil. Using tongs, lift each banana slice from the batter, letting the excess drip off, and place them into the pan. Cook for 2 minutes until golden, then flip and cook for another minute.
- Serve and Enjoy
Transfer the cooked banana slices to a plate and finish with your favorite toppings. Serve warm and enjoy!
Tips for the best mini banana pancakes
- Use a ripe but firm banana: very soft slices fall apart in the pan.
- Slice the banana about 1 cm (½ in) thick so the slices cook through in the time the batter browns.
- Keep the heat at medium: too hot and the batter burns before the banana softens.
- Grease the pan well and cook in batches, giving each slice space.
Variations
- Classic banana pancakes: mash the banana into the batter and cook spoonfuls as regular pancakes.
- Wholegrain: use wholemeal or oat flour.
- Toppings: maple syrup, peanut butter, berries, soy yogurt or a dusting of cocoa.
- Chocolate: add 1 tsp cocoa powder to the batter.
Storing
Best warm from the pan. Leftovers keep 1 day in the fridge; reheat in a dry pan.

Can I make banana pancakes with oat flour?
Yes. Blend oats into flour; the batter may need a splash more milk.
Why are my banana pancakes soggy?
