Ingredients

1 serving

Main ingredients

  • 1 large slice Sourdough bread
  • 4 cherry Cherry tomatoes
  • 125 g Burrata cheese
  • 2 g Basil

Seasonings and other

  • 3 clove Garlic
  • 1 tbsp Olive oil
  • ½ tsp Italian seasoning

Instructions

  1. Prepare the Tomato and Garlic Confit

Preheat the oven to 350°F (180°C). In a baking dish, combine the cherry tomatoes, whole garlic cloves, olive oil, and Italian seasoning. Roast for 40–45 minutes until the tomatoes and garlic are soft and slightly caramelized.

  2. Toast the Bread

While the confit is roasting, toast the sourdough bread slice until golden brown and crispy.

  3. Assemble the Toast

Once the confit is ready, spread the roasted garlic cloves over the toasted sourdough. Tear the burrata cheese and place it on top. Add the roasted tomatoes and finish with fresh basil leaves. Serve immediately and enjoy.

Tips for the best burrata toast

  • Take the burrata out of the fridge 20 minutes before serving: it's creamier at room temperature.
  • Spread the soft roasted garlic straight onto the warm toast like butter.
  • Make a bigger batch of confit: it keeps for a few days and is great on pasta.
  • Finish with flaky salt, black pepper and a drizzle of the confit oil.

Variations

  • Quick version: use fresh cherry tomatoes and a little grated garlic instead of the confit.
  • Sweet and savoury: add peaches or figs and a drizzle of balsamic glaze in summer.
  • With pesto: spread a spoon of pesto on the toast first.
  • Lighter: use mozzarella or ricotta instead of burrata.

Storing

Assemble just before eating. Keep leftover tomato and garlic confit covered in oil in the fridge for up to 4 days.

Frequently asked questions

What is burrata?

An Italian fresh cheese: a mozzarella shell filled with a soft mix of cream and shredded curd, called stracciatella.

What's the difference between burrata and mozzarella?

Burrata has a creamy, soft centre; mozzarella is the same kind of cheese but solid all the way through.

What bread is best for burrata toast?

A thick slice of sourdough or a rustic country loaf that stays crisp under the toppings.

Is burrata vegetarian?

Usually, but it depends on the rennet. Check the label for 'suitable for vegetarians' or microbial rennet.
